Prepare the Yeast
In a small bowl, combine the warm milk, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the frothy yeast mixture. Melt the unsalted butter and add it to the bowl along with the eggs. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until it is smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape the Rolls
Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased baking dish.

Cover the shaped rolls with a towel and let them rise again for about 30 minutes.

Bake the Rolls
Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown. Remove from the oven and let cool slightly.

In a medium bowl, soften the unsalted butter at room temperature. Add the local honey and a pinch of sea salt. Mix well until smooth and fully combined.
