Tuna and Seasoning

Slow Fried Olives

Confit of Leeks Vinaigrette

Preserved Lemon

Method

Preparation of Tomato Crisps

  1. 1

    Make Tomato Crisps

Preheat the oven to 200°F (90°C). Arrange the thinly sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 2-3 hours until they are dry and crisp. Let cool.

Preparation of Slow Fried Olives

  1. 2

    Fry Olives

In a saucepan, heat the olive oil over low heat. Add the pitted green olives and slow fry for 15-20 minutes until they are heated through and slightly crispy. Remove from heat and drain on paper towels.

Preparation of Confit of Leeks Vinaigrette

  1. 3

    Confit Leeks

In a saucepan, heat the olive oil over medium-low heat. Add the sliced leeks and cook gently for about 30 minutes until soft and tender. Stir in red wine vinegar, honey, salt, and pepper. Cook for an additional 5 minutes. Remove from heat.

Preparation of Basil Kaymak

  1. 4

    Basil Kaymak

In a mixing bowl, combine the kaymak or clotted cream with fresh basil leaves and lemon zest. Whip together until smooth and well combined. Set aside.

Cooking the Tuna

  1. 5

    Sear the Tuna

Heat a skillet over high heat and add a tablespoon of Calabrian chili oil. Season the tuna steaks with herbs de Provence and smoked salt. Sear the tuna for about 1-2 minutes on each side, depending on your desired doneness. Remove from heat and let rest.

Assembly

  1. 6

    Plate the Dish

On each plate, place a portion of confit leeks, seared tuna, slow-fried olives, and a dollop of basil kaymak. Garnish with diced preserved lemon, tomato crisps, and a drizzle of Calabrian chili oil. Serve immediately.
