Preheat the oven to 200°F (90°C). Arrange the thinly sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 2-3 hours until they are dry and crisp. Let cool.

In a saucepan, heat the olive oil over medium-low heat. Add the sliced leeks and cook gently for about 30 minutes until soft and tender. Stir in red wine vinegar, honey, salt, and pepper. Cook for an additional 5 minutes. Remove from heat.

In a mixing bowl, combine the kaymak or clotted cream with fresh basil leaves and lemon zest. Whip together until smooth and well combined. Set aside.
Cooking the Tuna

Sear the Tuna
Heat a skillet over high heat and add a tablespoon of Calabrian chili oil. Season the tuna steaks with herbs de Provence and smoked salt. Sear the tuna for about 1-2 minutes on each side, depending on your desired doneness. Remove from heat and let rest.
