Gnocchi Preparation

Mix Ingredients
In a large bowl, combine ricotta cheese, flour, egg, and salt. Mix until a smooth dough forms.

Form Gnocchi
On a floured surface, take small pieces of dough and roll them into 1-inch logs. Cut them into 1-inch pieces and shape with a fork for ridges.

Cook Gnocchi
Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.
Mushroom Marsala Preparation

Sauté Mushrooms
In a large skillet, heat olive oil over medium-high heat. Add sliced mushrooms and cook for 5-7 minutes until they are browned.

Add Garlic and Marsala
Stir in minced garlic and cook for an additional minute. Then, pour in the Marsala wine, salt, and black pepper, and simmer for 5 minutes until the sauce reduces.
Assembly and Garnishing

Combine Gnocchi and Sauce
Add cooked gnocchi to the skillet with the mushroom Marsala sauce. Gently toss to coat the gnocchi in the sauce.

Remove from heat and stir in the chopped wild ramps, fava beans, and fresh herbs. Serve immediately.
