Prepare the Cream Mixture
In a medium saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium heat until just simmering, then remove from heat and let steep for 15 minutes.

Whisk Egg Yolks
In a bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

Combine Mixtures
After steeping, slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.

Preheat Oven
Preheat your oven to 325°F (160°C).

Pour and Bake
Strain the mixture through a fine-mesh sieve into a measuring cup. Pour the mixture into ramekins, filling them about 3/4 full. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until just set but still wobbly in the center.

Cool and Chill
Remove ramekins from the water bath and let cool to room temperature. Cover and refrigerate for at least 2 hours, or overnight.

Sprinkle about 1 tablespoon of granulated sugar evenly over each chilled crème brûlée.

Caramelize the Sugar
Using a kitchen torch, caramelize the sugar until it turns golden brown. If you don’t have a torch, place the ramekins under the broiler for 1-2 minutes, watching closely to avoid burning.

Garnish and Serve
Let the caramelized sugar cool for a minute until it hardens. Top with fresh berries before serving. Enjoy your classic crème brûlée!
