Method
Steak
Bring to temperature
Remove the 3 oz A5 Kagoshima spinalis steak from refrigeration and let it rest at room temperature for 20–30 minutes to ensure even cooking.
Season
Pat the steak dry with paper towels. Lightly season both sides with fine sea salt (about 1/2 tsp total) and freshly ground black pepper (about 1/4 tsp). Because this is highly marbled A5 beef, use salt sparingly to avoid overwhelming the flavor.
Heat pan
Heat a heavy-bottomed skillet or cast-iron pan over high heat until smoking hot (2–4 minutes). Add 1 tablespoon neutral oil and swirl to coat the pan.
Sear
Place the steak in the hot pan. For a 3 oz spinalis flake (thin, highly marbled piece), sear 30–45 seconds per side for rare, turning once with tongs. Avoid overcooking; A5 spinalis is best served rare to medium-rare to appreciate the fat. If the cut is thicker, increase to 60 seconds per side and sear edges briefly.
Honey-miso glaze
Combine glaze ingredients
While the steak rests (or briefly before searing), whisk together 1 tablespoon white miso, 1 tablespoon honey, 1 tablespoon mirin, 1/2 tablespoon low-sodium soy sauce, 1/2 teaspoon rice vinegar, 1/2 teaspoon neutral or toasted sesame oil, 1/2 teaspoon grated fresh ginger and 1/2 teaspoon grated garlic in a small bowl until smooth. Adjust honey or miso to taste for sweetness or saltiness.
Warm glaze (optional)
If you prefer a slightly looser glaze, warm the mixture gently in a small saucepan over low heat for 1–2 minutes, stirring, until it becomes glossy. Do not boil — just warm to blend flavors.
Brush onto steak
Using a spoon or small brush, lightly coat the rested steak on both sides with the honey-miso glaze. For an attractive finish, apply a thin layer so the glaze complements rather than masks the beef. If desired, you can return the glazed steak to the hot pan for 5–10 seconds per side to set the glaze — watch carefully to avoid burning due to the honey.
Finish & serve
Garnish and season
Place the glazed steak on the serving plate. Sprinkle microgreens or thinly sliced scallion (about 1 tablespoon) on top. If using, add a light dusting (1/4 tsp) of shichimi togarashi or toasted sesame seeds for texture and a wedge of lemon or yuzu on the side for brightness.
