Remove the dry-aged tomahawk steak from the refrigerator and let it rest at room temperature for at least 1 hour before cooking. This allows for more even cooking.

Generously season both sides of the steak with kosher salt and freshly ground black pepper. Allow the seasoning to sit for about 15-20 minutes.
