Crispy Calamari Preparation

Prepare the Calamari

In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Dredge the calamari rings in the flour mixture and shake off excess.

Fry the Calamari

Heat the oil in a deep fryer or large pot to 350°F (175°C). Fry the calamari in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Sauté the Peppers

In a skillet, heat olive oil over medium heat. Add shishito peppers and sauté until blistered, about 5-7 minutes. Season with salt and toss in fresh basil before serving.

Roasted Garlic & Lime Aioli Preparation

Roast the Garlic

Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 20-25 minutes until soft. Let cool, then squeeze the garlic into a bowl.

Mix the Aioli

In a bowl, combine roasted garlic, mayonnaise, lime juice, salt, and black pepper. Mix until smooth and refrigerate until ready to serve.

Combine the Sauce

In a small bowl, mix together chili garlic sauce, soy sauce, and honey until well combined. Set aside.
