Crust

    Prepare the Pie Crust

    In a medium bowl, combine the all-purpose flour, unsalted butter, granulated sugar, and salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork it.

    Chill the Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Pre-Bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a 9-inch pie pan. Prick the bottom with a fork and bake for 15-20 minutes until lightly golden. Remove from the oven and let it cool.

Lemon Filling

    Mix Dry Ingredients

    In a saucepan, whisk together the granulated sugar and cornstarch.

    Add Water and Cook

    Gradually whisk in the water and cook over medium heat until the mixture thickens and starts to bubble, about 5-7 minutes.

    Combine Egg Yolks

    In a separate bowl, lightly beat the egg yolks. Slowly whisk in a small amount of the hot mixture to temper the yolks, then whisk the yolk mixture back into the saucepan.

    Add Lemon and Butter

    Stir in the lemon juice, lemon zest, and butter. Continue cooking for another 2-3 minutes until the butter is melted and the mixture is thick and smooth.

    Fill the Crust

    Pour the lemon filling into the pre-baked pie crust and spread it evenly.

Meringue Topping

    Whip Egg Whites

    In a clean bowl, beat the egg whites with an electric mixer on medium speed until foamy.

    Add Cream of Tartar

    Add the cream of tartar and continue beating until soft peaks form.

    Add Sugar Gradually

    Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff, glossy peaks form.

    Top the Pie

    Spread the meringue over the lemon filling, making sure to seal the edges to prevent shrinking.

    Bake the Meringue

    Bake the pie in the preheated oven at 350°F (175°C) for about 10-15 minutes or until the meringue is golden brown.
