Method
Cake Preparation

- 2
Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Melt in the microwave in 30-second intervals, stirring in between, until smooth and fully melted.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.
- 4
Combine Ingredients
Pour the melted chocolate mixture into the egg mixture, add vanilla extract and salt, then gently fold in the all-purpose flour until just combined.
- 5
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 6
Bake
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft and jiggly.
Serving
- 7
Cool and Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes, then invert each ramekin onto a plate.
- 8
Add Ice Cream
Serve immediately with a scoop of vanilla ice cream on top of each lava cake. Optionally, garnish with fresh raspberries and a dusting of powdered sugar.
