1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
2. Add More Vegetables
Stir in the chopped bell pepper, diced carrot, and diced celery. Cook for another 5 minutes, until the vegetables begin to soften.
3. Mix in the Spices
Add the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir well to combine and cook for 2 minutes to allow the spices to bloom.
4. Add the Remaining Ingredients
Pour in the canned diced tomatoes, black beans, kidney beans, corn, and vegetable broth. Stir everything together.
5. Simmer the Chili
Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.
6. Taste and Adjust
After simmering, taste the chili and adjust the seasoning with more salt and pepper if needed.
7. Serve
Ladle the chili into bowls and enjoy hot. Optional toppings include avocado, cilantro, or vegan sour cream.
