    Prepare the Hot Dogs

    Preheat your smoker to 225°F (107°C). Place the hot dogs in the smoker and smoke for about 1 hour, or until they reach your desired smokiness.

    Cook the Buffalo Fries

    While the hot dogs are smoking, prepare the buffalo fries according to package instructions or your favorite recipe. Set aside once cooked.

    Fry the Cheese Curds

    In a deep frying pan, heat oil to 350°F (175°C). Fry the cheese curds in batches until golden brown and crispy. Remove and drain on paper towels.

    Make the White Gravy

    In a saucepan, melt 1/4 cup of butter over medium heat. Whisk in 1/4 cup of flour and cook for 1-2 minutes. Gradually whisk in 1 cup of milk, stirring until thickened. Season with salt and pepper to taste.

    Assemble The Geddy Lee

    In each hot dog bun, place a smoked hot dog. Top with a generous amount of buffalo fries, fried cheese curds, and drizzle with white gravy. Finish with a sprinkle of crumbled bacon on top.
