    Prepare the Cheese Sauce

    In a saucepan over medium heat, melt 2 tablespoons of butter. Whisk in 2 tablespoons of flour and cook for 1-2 minutes until lightly golden. Gradually whisk in 1 cup of milk, stirring until the mixture thickens. Stir in 1 cup of shredded cheddar cheese, salt, black pepper, and garlic powder until melted and smooth. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook 6 slices of bacon until crispy. Transfer to a paper towel-lined plate to drain and crumble once cooled.

    Grill the Onions

    In the same skillet, add 2 tablespoons of butter and sliced onion. Cook over medium heat until the onions are caramelized and golden brown, about 10-15 minutes.

    Grill the Bratwurst

    Preheat the grill to medium-high heat. Grill the bratwurst for about 6-8 minutes, turning occasionally until fully cooked.

    Assemble the Brats

    Place each grilled bratwurst in a soft pretzel bun. Top with cheese sauce, grilled onions, and crumbled bacon. Serve warm.
