Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized strips, about 1/4 inch thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, frying for 4-5 minutes or until golden brown and crispy.

Drain and Season
Remove the fries from the oil with a slotted spoon and drain on paper towels. Immediately season with salt, pepper, garlic powder, and paprika to taste.
