Prepare the Patties
In a bowl, season the ground beef with salt and pepper. Divide the beef into two equal portions and shape them into loose balls.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels to drain.

Smash the Patties
In the same skillet with some bacon fat, place the beef balls and smash them down with a spatula to form patties. Cook for about 2-3 minutes on one side.

Flip and Add Toppings
Flip the patties and immediately add goat cheese on top. Cook for another 2-3 minutes until the cheese is melted and the patties are cooked to your liking.

Assemble the Burger
Spread fig jam on the bottom half of each bun. Place the first patty on top, followed by two slices of bacon, another patty, a drizzle of balsamic glaze, and BBQ sauce. Top with the other half of the bun.

Serve
Serve the Figgy Stardust burger immediately with your choice of side.
