    Prepare the Potatoes

    Wash and peel the potatoes. Slice them thinly (about 1/8 inch thick) using a mandoline or sharp knife.

    Soak the Potato Slices

    Place the potato slices in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Slices

    Drain the water and pat the potato slices dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

    While the chips are still hot, sprinkle with salt, paprika, garlic powder, onion powder, and black pepper to taste.

    Continue frying the remaining potato slices in batches until all are cooked and seasoned.
