Method
Preparing the Cake
- 1
- 2
Melt the Chocolate and Butter
In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 20-second intervals, stirring each time until completely melted and smooth.
- 3
Combine Sugar and Eggs
In a separate bowl, whisk together the powdered sugar, large eggs, and large egg yolks until well combined.
- 4
Mix in Chocolate
Pour the melted chocolate mixture into the egg mixture and stir until fully incorporated.
- 5
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture. Add vanilla extract and gently fold until just combined. Be careful not to overmix.
- 6
Pour into Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Baking the Cake
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.
- 8
Cool Slightly
Remove from the oven and let the cakes cool for 1-2 minutes before inverting them onto plates.
Serving the Dessert
- 9
Serve Immediately
Serve the chocolate lava cakes warm with a scoop of vanilla ice cream on top. Optionally, add fresh berries around the plate for garnish.
