Pulled Pork

Prepare the Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, and then season it with smoked paprika, garlic powder, onion powder, salt, and black pepper.

Shred the Pork
Remove the pork from the oven and let it rest for 15 minutes. Use two forks to shred the meat, and then mix in the barbecue sauce until well coated.
Waffle Fries

Cook the Waffle Fries
While the pork is roasting, prepare the waffle fries according to package instructions. Season with seasoned salt to taste.
Cilantro Lime Coleslaw

Make the Coleslaw
In a large bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro. In a separate bowl, whisk together lime juice, mayonnaise, sugar, and salt. Pour the dressing over the cabbage mixture and toss to combine.
Cajun Onion Strings

Prepare the Onion Strings
Soak the thinly sliced onion in buttermilk for at least 30 minutes. In a bowl, combine flour and Cajun seasoning.

Assemble the Pulled Pork Fries
On a large serving platter, layer the cooked waffle fries, followed by the pulled pork. Sprinkle with shredded cheddar-jack cheese, top with cilantro lime coleslaw and Cajun onion strings. Drizzle with additional barbecue sauce and serve with chipotle ranch on the side.
