Method
Preparing the Fries

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into straight, even strips about 1/4 inch thick.

Soak the Fries
Place the cut fries into a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the fries and spread them out on a clean towel. Pat them dry thoroughly to ensure they fry crispy.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries in batches to the hot oil. Fry for 5-7 minutes, or until golden brown and crispy.

Season the Fries
Remove fries from oil and place on a paper towel-lined plate. Sprinkle with kosher salt while still hot.

Combine Seasoning
In a large mixing bowl, combine the grated Parmesan cheese, truffle oil, garlic powder, and black pepper.

Toss Fries
Add the hot fries to the bowl with the seasoning mixture and toss until all fries are evenly coated.
Making the Chipotle Ketchup

Mix Ingredients
In a small bowl, combine the ketchup, chipotle powder, and lime juice. Stir until well combined.
Making the Creamy Truffle Sauce

Combine Sauce Ingredients
In another small bowl, mix together the mayonnaise, sour cream, truffle oil, lemon juice, and salt until smooth and creamy.

Plate the Fries
Serve the seasoned truffle fries hot with a side of chipotle ketchup and creamy truffle sauce for dipping.
