Method
Preparing the Fries

Cut the Potatoes
Peel the russet potatoes and cut them into straight-cut fries, approximately 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Season with Salt
While hot, sprinkle the fries with salt to taste.
Adding Truffle Flavor

Prepare Truffle Seasoning
In a small bowl, mix together the truffle oil, garlic powder, black pepper, and dried parsley.

Toss Fries
In a large bowl, toss the hot fries with the truffle seasoning until evenly coated.

Sprinkle the grated Parmesan cheese over the fries and toss again to combine.
Making the Sauces

In a small bowl, mix together the ketchup, chipotle powder, and lime juice until well combined.

In another bowl, combine the mayonnaise, truffle oil, lemon juice, and minced garlic. Stir until smooth.
