Crust

Method

Crust

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a food processor, crush the 24 Oreo cookies into fine crumbs. Melt the 1 cup of unsalted butter in a microwave-safe bowl and then mix it with the crushed Oreo cookies until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

Filling

  1. 2

    Make the filling

In a large mixing bowl, beat the 2 cups of cream cheese and 1 cup of granulated sugar together until smooth and creamy. Add in the 1 cup of sour cream and 1 teaspoon of vanilla extract, mixing well. Add the 3 large eggs, one at a time, mixing just until combined after each addition. Finally, gently fold in the crushed Oreo cookies.

  2. 3

    Combine with crust

Pour the cheesecake filling over the cooled Oreo crust in the springform pan. Spread it out evenly with a spatula.

Baking

  1. 4

    Bake the cheesecake

Bake the cheesecake in the preheated oven at 350°F (175°C) for 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for about 1 hour.

Topping

  1. 5

    Prepare the topping

Once the cheesecake has cooled to room temperature, refrigerate it for at least 4 hours or overnight. Before serving, spread 1 cup of whipped cream over the top and garnish with 4 Oreo cookies, breaking them into quarters for decoration.
