Pasta Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add Milk
Gradually whisk in the milk, stirring continuously until the mixture is smooth and begins to thicken (about 5-7 minutes).

Add Cheese and Seasoning
Remove from heat and stir in sharp cheddar cheese, Monterey Jack cheese, Cajun seasoning, and black pepper until the cheese is melted and the sauce is creamy.

Combine and Bake

Mix Everything Together
In a large mixing bowl, combine the cooked pasta, cheese sauce, diced blackened chicken, cooked Andouille sausage, and shrimp. Mix until well combined.

Prepare for Baking
Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.

Add Toppings
In a small bowl, mix breadcrumbs and Parmesan cheese. Sprinkle this mixture evenly over the mac and cheese. Drizzle with a little olive oil if desired.

Bake
Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.

Garnish and Serve
Remove from the oven, garnish with chopped parsley, and let it cool slightly before serving.
