Deviled Eggs

Pico de Gallo

Method

Deviled Eggs Preparation

  1. 1

    Boil the Eggs

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan, remove it from heat, and let it sit for 12 minutes.

  2. 2

    Cool and Peel

After 12 minutes, transfer the eggs to an ice water bath to cool for about 5 minutes. Once cooled, gently tap the eggs on a hard surface and peel off the shells.

  3. 3

    Prepare the Filling

Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and paprika to the yolks. Mash and mix until smooth.

  4. 4

    Fill the Egg Whites

Spoon or pipe the yolk mixture back into the egg white halves.

  5. 5

    Garnish

Sprinkle chopped fresh chives over the filled eggs and set aside.

Pico de Gallo Preparation

  1. 6

    Chop Ingredients

Dice the tomatoes and red onion, and chop the cilantro finely.

  2. 7

    Mix the Pico de Gallo

In a bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well.

  3. 8

    Top the Deviled Eggs

Spoon the pico de gallo mixture over the garnished deviled eggs just before serving.
