Method

Prepare the Fries

    Cook the French Fries

    Preheat your oven or fryer according to the package instructions for the frozen French fries. Cook the fries until they are golden brown and crispy, usually about 20-25 minutes in the oven or 5-7 minutes in a fryer.

    Season the Fries

    Once cooked, remove the fries from the oven or fryer and sprinkle with salt to taste. Set aside while you prepare the queso and other toppings.

Make the Queso Cheese Sauce

    Melt the Butter

    In a medium saucepan over medium heat, melt the unsalted butter.

    Create the Roux

    Add the all-purpose flour to the melted butter, stirring constantly for about 2 minutes until it forms a roux.

    Add Milk

    Gradually whisk in the whole milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 3-5 minutes.

    Incorporate the Cheeses

    Lower the heat and add the cream cheese, Monterey Jack cheese, and Pepper Jack cheese. Stir continuously until all the cheese has melted and the sauce is smooth.

    Stir in the diced green chilies, ground cumin, garlic powder, onion powder, and season with salt and pepper to taste. Keep warm over low heat.

Cook the Bacon

    In a skillet over medium heat, cook the double smoked bacon slices until crispy, about 5-7 minutes. Remove from the skillet and let cool, then crumble into small pieces.

Make the Chipotle Ranch

    In a small bowl, mix together the ranch dressing, minced chipotle peppers, and lime juice until well combined. Set aside.

Assemble the Queso Fries

    On a large serving plate, spread the seasoned fries in an even layer.

    Pour the warm queso cheese sauce generously over the fries.

    Sprinkle the crumbled bacon and shredded cheddar cheese over the queso. Optionally, you can add chopped cilantro for garnish.
