Prepare the Onions
Slice the medium onion into thin rings. In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the sliced onion and a pinch of salt. Sauté until the onions are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning.

Shape the Beef Patty
In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently to combine, then form the mixture into two equal-sized patties.

Cook the Patties
In the same skillet used for the onions, add a little more butter if needed, and increase the heat to medium-high. Once hot, add the beef patties. Cook for about 3-4 minutes on one side, then flip and place a slice of Swiss cheese on top of each patty. Cook for another 3-4 minutes or until the cheese is melted and the patties reach your desired doneness.

Toast the Bread
While the patties are cooking, butter one side of each slice of marble rye bread. Once the patties are done, remove them from the skillet and set aside. In the same skillet, place the buttered side down and toast the bread until golden brown, about 2-3 minutes. You may need to do this in batches.

Assemble the Patty Melt
Spread Dijon mustard on the unbuttered side of two slices of toasted marble rye. Place a cooked beef patty with melted Swiss cheese on top, followed by a generous portion of the caramelized onions. Top with another slice of toasted bread, unbuttered side facing down. Repeat for the second sandwich.
