Fried Cauliflower

Prepare the Cauliflower
Wash and cut the cauliflower into bite-sized florets. Pat them dry with a paper towel to remove excess moisture.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the beer until the batter is smooth and thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cauliflower
Dip each cauliflower floret into the batter, allowing excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
In a medium saucepan over medium heat, combine the shredded sharp cheddar cheese, softened cream cheese, beer, Dijon mustard, garlic powder, salt, and black pepper.

Melt the Cheese
Stir continuously until the cheese is melted and the mixture is smooth and creamy, about 5-7 minutes. Remove from heat.

Serve
Transfer the beer cheese to a serving bowl and serve warm alongside the fried cauliflower.
