Method
Fries
- 1
Prepare the fries
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Add the frozen sidewinder fries in small batches and fry until golden brown and crispy, about 3-5 minutes. Use a slotted spoon to transfer the fries to a paper towel-lined plate to drain excess oil.
Gravy
- 2
Make the gravy
In a saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the flour, stirring constantly for about 2 minutes until it forms a light roux. Gradually add the beef or vegetable broth while continuously whisking to avoid lumps. Stir in soy sauce, black pepper, and salt. Bring to a simmer and cook for about 5-7 minutes until the gravy thickens. Adjust seasoning to taste.
Assembly
- 3
Assemble the poutine
Place a generous portion of the crispy fries on a serving plate. Pour hot gravy over the fries, ensuring they are well coated. Top with fresh cheese curds and sprinkle with chopped green onions. Serve immediately.
