Method

Preparation

  1. 1

    Wash and Slice Potatoes

Thoroughly wash the potatoes under running water to remove dirt. Using a mandoline or a sharp knife, slice the potatoes into thin, even slices, about 1/8 inch thick.

  2. 2

    Soak Potato Slices

Place the sliced potatoes into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

Cooking

  1. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping in a small piece of potato; if it sizzles, the oil is ready.

  2. 4

    Fry the Potato Slices

Carefully drain and pat the soaked potato slices dry with a paper towel. Fry them in batches, making sure not to overcrowd the pan. Cook for about 3-5 minutes or until they are golden brown and crispy.

  3. 5

    Drain and Season

Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and any optional seasonings you desire.
