Crust

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it into the crumb mixture until well combined.

    Bake the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, or until lightly golden. Remove from the oven and let cool while preparing the filling.

    Prepare the filling

    In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the granulated sugar, and mix until well blended.

    Add remaining ingredients

    Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Make sure to scrape down the sides of the bowl to incorporate all ingredients.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill the cheesecake

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight, to set completely.

Strawberry sauce

    Prepare the sauce

    In a small saucepan over medium heat, combine fresh strawberries, granulated sugar, and lemon juice. Cook, stirring gently, until the strawberries break down and the mixture thickens, about 10 minutes.

    Cool the sauce

    Remove from heat and let the sauce cool to room temperature. You can also puree the sauce for a smoother texture if desired.

    Serve the cheesecake

    Once the cheesecake is fully chilled, remove it from the springform pan. Slice and serve each piece topped with strawberry sauce.
