    Heat the Milk

    In a large pot, pour 1 gallon of whole milk. Heat the milk over medium heat, stirring occasionally, until it reaches 190°F (88°C). Use a thermometer to check the temperature.

    Add Vinegar

    Once the milk reaches 190°F, remove the pot from heat. Slowly add 1 cup of white vinegar while gently stirring the milk. You will notice the curds beginning to separate from the whey.

    Let it Sit

    Cover the pot with a lid and let it sit undisturbed for about 10 minutes to allow the curds to form completely.

Straining and Salting

    Strain the Curds

    Place a large bowl in the sink and line it with cheesecloth. Pour the curds and whey mixture into the cheesecloth. Allow the whey to drain for about 5-10 minutes.

    Add Salt

    Once most of the whey has drained, gather the corners of the cheesecloth and twist to squeeze out any excess whey. Transfer the curds to a bowl and sprinkle with 1 tsp of salt. Mix gently to combine.
