Mac & Cheese Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add the Cheeses
Reduce heat to low and add shredded cheddar and mozzarella cheese to the thickened milk mixture. Stir until the cheese is fully melted and the sauce is creamy. Season with salt and black pepper.

Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and stir until the pasta is well-coated.
Adding Vegetables and Protein

Steam the Broccoli
In a steamer basket over boiling water, steam broccoli florets for about 5-7 minutes until tender but still bright green. Set aside.

Prepare Chicken and Bacon
In a large bowl, combine diced grilled chicken and crumbled bacon with the mac and cheese mixture. Gently fold in the steamed broccoli.
Pico de Gallo Preparation

Make the Pico de Gallo
In a medium bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
Queso Preparation

Prepare the Queso
In a small saucepan over low heat, combine cream cheese, shredded cheddar, and milk. Stir until melted and smooth. If desired, add diced jalapeño for extra heat.
Assembly

Assemble the Dish
Spoon the mac and cheese mixture onto plates or into bowls. Top with pico de gallo and drizzle the warm queso over the top. Serve immediately.
