Prepare the Pasta

Cook the Elbow Macaroni
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Cook the Buffalo Chicken

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Season the chicken breast with olive oil, salt, and black pepper. Grill for about 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from the grill and let it rest for a few minutes before slicing into bite-sized pieces.

Coat with Buffalo Sauce
In a bowl, toss the grilled chicken pieces with 1 cup of buffalo sauce until well coated. Set aside.
Make the Cheese Sauce

Add Milk and Cheese
Slowly whisk in the milk, continuing to stir until the mixture thickens, about 5 minutes. Add the shredded cheddar cheese, garlic powder, onion powder, and salt. Stir until the cheese is completely melted and the sauce is smooth.
Combine and Serve

Mix Pasta, Sauce, and Chicken
In a large mixing bowl, combine the cooked macaroni, cheese sauce, and buffalo chicken. Stir until the pasta is well coated with the sauce.

Serve
Transfer the buffalo mac & cheese to a serving dish. Drizzle with extra buffalo sauce and garnish with chopped green onions. Serve warm and enjoy!
