Method

Preparing the Seafood

1

Marinate the Seafood

In a bowl, combine the salmon, prawns, and tuna steak. Drizzle with olive oil, season with salt and pepper, and let marinate for 20 minutes.

2

Grill the Seafood

Preheat the grill to medium-high heat. Grill the salmon for about 5 minutes on each side, prawns until they turn pink (about 3-4 minutes), and tuna for 1-2 minutes on each side for rare doneness.

Making the Salsa Verde

3

Blend the Salsa Verde

In a blender, combine parsley, basil, capers, garlic, olive oil, and lemon juice. Blend until smooth and season with salt to taste.

Cooking Rice and Vegetables

4

Cook the Rice

In a pot, bring 2 cups of water to a boil. Add rice, cover, and simmer for 15-20 minutes until cooked.

5

Sauté the Vegetables

In a pan, heat a tablespoon of olive oil. Add chopped bell pepper, zucchini, and carrot. Sauté for 5-7 minutes until tender.

Serving

6

Plate the Dish

On a plate, serve a portion of rice, topped with the sautéed vegetables. Arrange the grilled seafood on top and drizzle with salsa verde.
