1. Prepare the Vegetables
Slice the onion and red bell pepper into thin strips.
2. Cook the Meat
In a large skillet over medium heat, add 1 tablespoon of olive oil. Season the ribeye steak or chicken breast with salt and black pepper. Cook for about 5-7 minutes on each side until cooked through. Remove from skillet and let rest.
3. Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil and add the sliced onion and red bell pepper. Sauté for about 5-7 minutes until they are tender and caramelized.
4. Combine and Melt Cheese
Slice the cooked meat into thin strips and return to the pan with the vegetables. Place Swiss cheese on top and cover the skillet to melt the cheese for about 2-3 minutes.
5. Assemble the Sandwiches
Divide the meat and cheese mixture between the two sub rolls. Serve immediately with chips and a kosher dill pickle on the side.
