Preparation of Croutons

Make the Croutons
Preheat the oven to 375°F (190°C). Cut the focaccia bread into cubes and place them in a bowl. Toss with olive oil, garlic powder, and salt. Spread the cubes on a baking sheet and bake for 10-15 minutes or until golden brown and crispy.
Making the Dressing

Prepare the Caesar Dressing
In a bowl, mash the garlic and anchovy fillets together. Add the egg yolk, Dijon mustard, and lemon juice, whisking until combined. Gradually whisk in the olive oil until the dressing is emulsified. Stir in the Parmesan cheese and season with salt and pepper to taste.

Combine the Salad
In a large mixing bowl, tear the romaine lettuce into bite-sized pieces. Drizzle with the Caesar dressing and toss to combine. Add the croutons and Grana Padano cheese, tossing gently to combine. Serve immediately.
