Pork Chop Preparation

    Season and Sear the Pork Chop

    Season the pork chop with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork chop for 4-5 minutes on each side until it reaches an internal temperature of 145°F. Remove from heat and let rest.

Smoked Apple + Jalapeño Puree

    Make the Puree

    In a saucepan, combine apples, jalapeño, smoked paprika, lemon juice, and salt. Add a little water and simmer until the apples are soft. Blend until smooth and set aside.

Spicy Cheddar Grits

    Prepare the Grits

    In a pot, bring chicken broth to a boil. Slowly whisk in grits and reduce heat to low. Cook for 20-25 minutes until thickened. Stir in butter, cheddar cheese, cayenne pepper, and salt. Mix until smooth.

Seasonal Vegetables

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables, season with salt and pepper, and sauté until tender, about 5-7 minutes.

Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, combine beef stock, red wine, and shallots. Simmer until reduced by half. Stir in butter and season with salt and pepper. Keep warm.

Assembly

    Plate the Dish

    On a plate, place a generous scoop of spicy cheddar grits, top with the pork chop, drizzle with smoked apple + jalapeño puree, and arrange sautéed vegetables on the side. Finish with a drizzle of demi-glace.
