Steak Butter Preparation
Make the Steak Butter
In a bowl, combine softened unsalted butter, minced garlic, chopped parsley, chopped thyme, lemon zest, salt, and black pepper. Mix until well combined and then transfer to parchment paper. Roll into a log shape and refrigerate until firm.
Roast Potatoes Preparation
Roast the Potatoes
Preheat the oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, rosemary, salt, and black pepper. Spread on a baking sheet and roast for about 25-30 minutes, or until golden brown and crispy.
Vegetable Preparation
Prepare the Vegetables
In a bowl, toss asparagus and carrot sticks with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven for the last 15 minutes of potato roasting time, or until tender.
Steak Cooking
Cook the Steak
Season the AAA Alberta striploin steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or adjust cooking time to your desired doneness. Remove from heat and let rest for a few minutes.
