    Bring a pot of water to a gentle simmer and poach the eggs for about 3-4 minutes until the whites are set and yolks are runny.

    Toast the English Muffins

    Split the English muffins in half and toast them until golden brown.

    Cook the Canadian Bacon

    In a skillet over medium heat, cook the Canadian bacon for about 2-3 minutes on each side until heated through.

    Assemble the Sandwich

    On each toasted muffin half, place a slice of Canadian bacon, top with a poached egg, and generously drizzle with hollandaise sauce. Garnish with chopped fresh parsley.

    Wash and peel the potatoes. Cut them into thin strips to resemble fries.
