Chicken Skewers

Prepare Chicken

Cut the chicken breast into 1-inch cubes. Place them in a mixing bowl.

Marinate Chicken

Add achiote paste, olive oil, lime juice, salt, and black pepper to the chicken. Mix well to ensure all pieces are coated. Let marinate for at least 30 minutes.

Skewering

Thread the marinated chicken onto wooden skewers, leaving a little space between each piece.

Grill Skewers

Preheat your grill to medium-high heat. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.

Cilantro Slaw

Prepare Vegetables

In a large bowl, combine the shredded green cabbage, chopped cilantro, and grated carrot.

Dress Slaw

In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour over the cabbage mixture and toss well to combine.

Chill

Refrigerate the slaw for at least 15 minutes before serving to allow the flavors to meld.

Pickled Jalapenos

Prepare Pickling Solution

In a saucepan, combine white vinegar, water, sugar, and salt. Heat over medium heat until the sugar and salt dissolve.

Pickle Jalapenos

Place the sliced jalapenos in a clean jar. Pour the hot pickling solution over the jalapenos, ensuring they are fully submerged.

Cool and Store

Let the jar cool to room temperature, then cover and refrigerate. The jalapenos will be ready to use after a few hours, but they're best after 24 hours.
