Preparing the Fries

Cutting the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

Soaking the Potatoes
Place the cut potatoes in cold water and let them soak for at least 30 minutes to remove excess starch.

Drying the Potatoes
Drain the potatoes and pat them dry using a clean kitchen towel or paper towels.

Heating the Oil
In a large pot or deep fryer, heat vegetable oil to 325°F (160°C).

Frying the Potatoes
Carefully add the dried potato strips in batches to the hot oil and fry for about 5-6 minutes until they are soft but not browned. Remove with a slotted spoon and transfer to a paper towel-lined plate.

Increase the oil temperature to 375°F (190°C), then fry the potatoes again in batches for an additional 3-4 minutes until golden and crispy. Remove and season with salt to taste.

Marinating
Let the steaks sit at room temperature for about 30 minutes to marinate.

Grilling the Steak
Preheat your grill or grill pan to medium-high heat. Grill the steaks for about 4-5 minutes per side for medium-rare, or until your desired doneness is achieved.

Resting the Steak
Remove the steaks from the grill and let them rest for at least 5 minutes. Sprinkle fresh rosemary on top before serving.
