Method
Prepare Pickled Onions
Make the Pickling Solution
In a small saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a simmer over medium heat until the sugar and salt dissolve completely.
Prepare the Salad
Wash the Greens
Thoroughly rinse the farmer's greens under cold water to remove any dirt or grit. Shake off excess water and roughly chop them into bite-sized pieces.
Prepare the Carrots
Peel the carrots and slice them thinly into rounds or julienne them for a different texture.
Chop the Tomato
Remove the stem from the tomato, then chop it into bite-sized pieces.
Combine Ingredients
In a large mixing bowl, combine the chopped greens, sliced carrots, and chopped tomato.
Assemble the Salad
Add Pickled Onions
After the pickled onions are ready, drain them from the pickling solution and add them to the salad mixture.
Dress the Salad (optional)
If using, drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste. Toss everything together gently to combine.
Serve
Transfer the salad to a serving bowl or individual plates and enjoy fresh!
