Method

Prepare the Steak

  1. 1

    Season the Ribeye

Pat the ribeye steak dry with paper towels. Rub the steak with olive oil and season generously with salt, black pepper, garlic powder, and fresh rosemary on both sides.

  2. 2

    Preheat the Grill

Preheat your grill to high heat (about 450°F to 500°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Steak

Place the seasoned ribeye steak on the grill. Grill for about 4-5 minutes on one side for medium-rare, then flip and grill for another 3-4 minutes on the other side. Adjust timing if you prefer a different doneness.

  4. 4

    Rest the Steak

Once done, remove the steak from the grill and let it rest on a cutting board for about 5 minutes. This allows the juices to redistribute.

Prepare the Vegetables

  1. 5

    Chop the Vegetables

While the steak is resting, chop the zucchini, bell pepper, and carrots into bite-sized pieces.

  2. 6

    Sauté the Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables and season with salt and black pepper. Sauté for 5-7 minutes until the vegetables are tender but still crisp.

  3. 7

    Plate the Dish

Slice the rested ribeye steak against the grain and serve it alongside the sautéed seasonal vegetables.
