For the Parm Frites

    Prepare the Potatoes

    Wash and peel the Russet potatoes, then cut them into thin strips to resemble fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Preheat the Oven

    While the potatoes are soaking, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Dry and Season

    After soaking, drain the potatoes and pat them dry with a clean towel. In a large bowl, toss the potatoes with olive oil, salt, black pepper, and garlic powder until evenly coated.

    Bake the Fries

    Spread the potatoes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

    Add Parmesan

    Remove the fries from the oven and sprinkle the grated Parmesan cheese over the hot fries. Toss to combine and allow the cheese to melt slightly.

For the Garlic Aioli

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper.

    Whisk Together

    Whisk the mixture until it is smooth and well combined. Adjust seasoning to taste.

    Chill

    Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.

For the Ketchup

    Transfer the ketchup to a serving bowl.
