Preparing the broth

    Cook the onions

    In a large pot, melt the butter over medium heat. Add the sliced yellow onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes.

    Add garlic and spices

    Stir in minced garlic, thyme, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

    Deglaze the pot

    Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for about 5 minutes.

    Add beef broth

    Pour in the beef broth and add the bay leaf. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.

Preparing the toppings

    Toast the sourdough bread

    While the broth is simmering, preheat your oven to 350°F (175°C). Brush the sourdough slices with olive oil and place them on a baking sheet. Toast in the oven for 10-15 minutes until golden and crisp.

    Add cheese

    Remove the broth from heat and discard the bay leaf. Ladle the soup into oven-safe bowls, top each with a slice of toasted sourdough, and sprinkle with Gruyere cheese.

    Broil the soup

    Place the bowls under the broiler for 2-4 minutes, or until the cheese is melted and bubbly. Watch closely to avoid burning.
