Prepare Vegetables

Cook Asparagus
Bring a pot of salted water to a boil. Add the asparagus and cook for 3-4 minutes until bright green and tender-crisp. Drain and place in ice water to stop the cooking process. Once cooled, cut into bite-sized pieces.

Wash Spinach and Arugula
Thoroughly wash the spinach and arugula under cold running water. Spin dry in a salad spinner or pat dry with a clean kitchen towel.
Make Pistou

Blend Pistou Ingredients
In a food processor, combine the fresh basil, garlic cloves, pine nuts, and Parmesan cheese. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and black pepper to taste.
Assemble Earth Bowl

Combine Ingredients
In a large bowl, add the cooked asparagus, sautéed wild mushrooms, spinach, and arugula. Toss gently to combine.

Add Pistou
Drizzle the prepared pistou over the salad and toss gently to coat all the ingredients evenly.

Serve
Divide the salad into serving bowls and shave Grana Padano cheese over the top. Serve immediately.
