    Prepare the Onions

    Peel the large onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together until well blended. In another bowl, whisk together the milk and egg until smooth.

    Combine Batter Ingredients

    Pour the milk and egg mixture into the flour mixture. Stir until just combined; do not overmix. The batter should be thick enough to coat the onion rings.

    Heat the Oil

    In a large heavy pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Onion Rings

    Dip each onion ring into the batter, allowing the excess to drip off, then carefully place them in the hot oil. Fry in batches, without overcrowding, for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and transfer to a paper towel-lined plate to drain.

    In a small bowl, combine the mayonnaise, curry powder, minced garlic, and lemon juice. Mix until well combined.

    Season the Aioli

    Taste the aioli and season with salt and black pepper according to your preference. Adjust the curry powder if you want a stronger flavor.

    Transfer the curry aioli to a serving bowl and serve alongside the freshly fried onion rings.
