Chocolate Mousse

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, pour in the heavy cream and use an electric mixer to whip it until soft peaks form. Be careful not to over-whip, as you want it to remain light and airy.

Beat the Egg Whites
In a clean mixing bowl, add the egg whites and a pinch of salt. Using a mixer, beat on medium speed until soft peaks form. Gradually add the granulated sugar and continue whipping until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream using a spatula until fully incorporated. Then, carefully fold in the beaten egg whites, one third at a time, ensuring not to deflate the mixture.

Add Vanilla
Once combined, fold in the vanilla extract to enhance the flavor of the mousse.

Spoon the mousse mixture into individual serving dishes or a large bowl and refrigerate for at least 2 hours, or until set.
