Cake Batter

Method

Preparation of Cake Batter

  1. 1

    Melt Chocolate and Butter

In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Heat over low heat, stirring constantly until both are melted and smooth. Remove from heat and let cool slightly.

  2. 2

    Mix Eggs and Sugar

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale in color.

  3. 3

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture while whisking continuously. Add the vanilla extract and mix until fully combined.

  4. 4

    Add Flour

Sift the all-purpose flour over the mixture and gently fold it in using a spatula until just combined. Be careful not to overmix.

Baking the Cake

  1. 5

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust with flour, tapping out the excess. Place them on a baking tray.

  2. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  3. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set but not cracked.

  4. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

  5. 9

    Invert and Serve

Carefully run a knife around the edges of each cake to loosen it. Invert each ramekin onto a dessert plate. Serve immediately with a dusting of powdered sugar and a scoop of vanilla ice cream or a dollop of whipped cream.
