Tortilla Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.

    Add Wet Ingredients

    Add the olive oil and water to the flour mixture. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a kitchen towel and let it rest for 15 minutes.

    Roll Out the Tortillas

    Divide the dough into 6 equal portions. Roll each portion into a thin circle, about 8 inches in diameter.

Filling Preparation

    Caramelize the Onions

    In a skillet over medium heat, add a little oil and the sliced onion. Cook, stirring occasionally, for about 10-15 minutes or until golden brown.

    Cook the Peppers

    In the same skillet, add the diced bell peppers and sauté for about 3-5 minutes until softened.

    Scramble the Eggs

    In a bowl, beat the eggs and season with salt and pepper. Pour into the skillet and scramble with the peppers and onions until cooked through.

    Add Cheese

    Sprinkle the shredded Monterey Jack and mozzarella cheese over the eggs and let it melt slightly.

Assembly and Cooking

    Heat the Tortillas

    In a clean skillet over medium heat, cook each tortilla for about 1 minute on each side until lightly golden.

    Fill the Quesadilla

    Place a tortilla in the skillet, add a portion of the egg and cheese mixture, and top with pickled jalapeños. Cover with another tortilla.

    Cook the Quesadilla

    Cook for about 3-4 minutes on one side until golden and crispy, then flip and cook for an additional 3-4 minutes.

    Slice and Serve

    Remove from the skillet, let cool for a minute, then slice into wedges and serve hot.
