Method

Prepare the Shrimp

Season and Coat the Shrimp

In a bowl, season the shrimp with salt and pepper. Dredge each shrimp in panko breadcrumbs to coat evenly.

Cook the Shrimp

In a skillet over medium-high heat, add a tablespoon of oil. Once hot, add the coated shrimp and cook for about 2-3 minutes on each side until golden brown and cooked through. Remove from heat and set aside.

Prepare the Pasta and Vegetables

Cook the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Sauté Spinach and Tomato

In the same pot, add the drained spaghetti back in. Over medium heat, add the spinach and diced tomato. Stir for about 2-3 minutes until the spinach is wilted. If the mixture is too dry, add some reserved pasta water.

Prepare the Garlic Toast

Make Garlic Butter

In a small bowl, mix together softened butter and garlic powder until well combined.

Toast the Bread

Spread garlic butter on both sides of the bread slices. In a skillet, toast the bread over medium heat until golden brown on both sides, about 2-3 minutes per side.

Combine and Serve

Mix it All Together

Add the blackened shrimp to the pasta and toss gently to combine. Drizzle with sweet chili sauce and serve with a dollop of Calabrian aioli.
