    Make the Tortilla Dough

    In a mixing bowl, combine all-purpose flour and salt. Slowly add water and vegetable oil, mixing until a dough forms.

    Knead and Rest

    Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out the Tortillas

    Divide the dough into 8 equal portions. Roll each portion into a thin circle about 8 inches in diameter.

    Cook the Tortillas

    Heat a skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side until lightly browned. Keep warm.

Filling

    Cook the Ground Beef

    In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Season with salt and black pepper to taste.

    Prepare Avocado Mousse

    In a small bowl, mash the avocado and mix with lime juice, salt, and pepper to taste until smooth.

Salsa

    Make the Salsa

    In a bowl, combine diced tomatoes, chopped onion, cilantro, minced jalapeño, lime juice, and salt to taste. Mix well and set aside.

Assembly

    Assemble the Quesadilla

    On one half of each tortilla, layer the cooked ground beef, mozzarella cheese, and white cheddar cheese. Top with a dollop of avocado mousse.

    Cook the Quesadilla

    Fold the tortilla over and place in a skillet over medium heat. Cook until the cheese melts and the tortilla is golden brown, about 2-3 minutes per side.

    Cut the quesadilla into wedges and serve hot with homemade salsa on the side.
